Hayakawa sake brewery / 合名会社早川酒造 is a small brewery in Mie prefecture operated by father and son. Because they painstakingly manage each step in the delicate process of brewing sake, they produce only a small amount that is hard to obtain and highly valuable even in Japan. At the foot of Suzuka mountains, they brew a sake of a highly subtle flavor. So far, this flavor has made the Tabika brand, which is brewed using Bizen-omachi, a serious topic and a major hit among local sake connoisseurs, mainly in urban areas. This is a pure rice scrutinized fermentation sake that features the well-rounded depths of flavor offered by Omachi rice and an ostentatious aroma.
