Nate sake brewery / 株式会社名手酒造店 was founded in 1866 in Wakayama. Because 60% of the sake it produces is distributed locally, this brand is quite hard to obtain outside the prefecture. Because the water used to brew it is somewhat hard, it produces a vigorous fermentation that creates a breadth of flavor, smoothness, umami, and robustness. Because “Kanzan-kuroushi / 環山 黒牛 | Junmai-daiginjo drip filtration" is bottled through the method of Tobindori, which applies no pressure and is used for high-grade sake, it has a mild and refreshing aroma in addition to a mellowness and flavor appropriate of a junmai-shu.
